In general, oxidants kill bacteria by reacting with chemical groups both in the cell wall and inside the cell that are subject to oxidation.

Specifically, they destroy the chemical components of the cell that are necessary for the maintenance of vital functions within the cell. They can react with several functional chemical groups, including the following:

 

• N-H groups that are part of some amino acids (lysine, histidine, arginine) and nucleotide bases (adenine, cytosine and guanine).

• S-H groups of the amino acid cysteine.

• Phenolic group of the amino acid tyrosine.

• Carbon-carbon double bond of unsaturated fatty acids.
